Prep: 1. Cut/chop: shallot, butter lettuce, apples, cheese and almonds. Make: 1. To make dressing: Combine both vinegars and shallot in a bowl. 2. Whisk in oil and season with salt to taste. 3. Combine chopped lettuce, apple, cheese, and almonds in a large bowl. 4. Add enough of vinaigrette to coat salad lightly and toss well. 5. Divide salad evenly among plates.
Manchego is a hard sheep's cheese from Spain, if you've never tried it we highly recommend giving it a try. That said, any hard cheese works well in this salad.
