Green Apple, Almond, and Manchego Salad

Ingredients

  • 1 tablespoon minced shallot
  • 4 cups butter lettuce, torn into bite-sized pieces, lightly packed
  • 1 medium Granny Smith apple, cut into matchstick-sized strips
  • 2 ounces Manchego cheese, cut into strips
  • 1/4 cup coarsely chopped salted almonds
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons red wine vinegar
  • 3 tablespoons extra-virgin olive oil
  • a pinch of sea salt

Directions

Prep: 1. Cut/chop: shallot, butter lettuce, apples, cheese and almonds. Make: 1. To make dressing: Combine both vinegars and shallot in a bowl. 2. Whisk in oil and season with salt to taste. 3. Combine chopped lettuce, apple, cheese, and almonds in a large bowl. 4. Add enough of vinaigrette to coat salad lightly and toss well. 5. Divide salad evenly among plates.

Notes

Manchego is a hard sheep's cheese from Spain, if you've never tried it we highly recommend giving it a try. That said, any hard cheese works well in this salad.
