Sweet Winter Squash Souffle (gf)

Ingredients

  • 1 whole kabocha squash
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt, to taste
  • 3 tablespoons unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Directions

Prep: 1. Preheat oven to 375. 2. Cut squash in half. Make: 1. Bake squash on baking sheet at 375 until soft (45-60 minutes). 2. Reduce oven to 350. 3. Blend together: baked insides of cooked squash (rinds removed), eggs, melted butter, cinnamon, and vanilla. 4. Place in baking dish. Bake at 350 for 20-30 minutes.
