Prep: 1. Slice/chop: green cabbage, red cabbage, red bell peppers, green onions, cilantro and peanuts. Make: 1. For the dressing, whisk peanut butter, oil, vinegar, sugar, soy sauce, ginger, and garlic together. 2. Combine the cabbage, bell peppers, carrots, green onions, and cilantro in a bowl. 3. Add dressing and toss to coat. Season with salt, if desired. (Can be prepared several hours ahead. Cover and chill.) 4. To serve, sprinkle with peanuts.
