Prep: 1. Mince green onion and garlic. 2. Slice avocado and tomato. 3. For spread, combine mayonnaise, mustard, green onion and garlic in a bowl. Make: 1. Cook bacon and drain well. 2. Lightly toast bread; spread each slice with a thin layer of seasoned mayo. 3. Top 4 slices of bread with avocado and tomato slices, dividing them evenly. 4. Sprinkle with salt and pepper to taste. 5. Divide bacon and arugula between sandwiches. 6. Top with remaining slices of toast. Cut each sandwich in half and serve.
The seasoned mayonnaise on this is spectacular! If you're looking to cut down on time though plain mayonnaise works just fine.
