Ingredients

  • 1 tablespoon unsalted butter
  • 2 tablespoons unbleached all-purpose flour
  • 1 cup cold milk
  • 1 bay leaf, preferably fresh
  • 1 1/4 cup grated Gruyere cheese, packed
  • a pinch nutmeg
  • salt and pepper
  • 8 slices of crusty bread
  • 1 cup parmesan cheese
  • 1/4 pound thinly sliced ham

Directions

For sauce: 1. Melt butter in a saucepan over medium heat. 2. Add flour and stir constantly for 1 minute (Do not brown flour). 3. Add milk all at once, then bay leaf. Whisk to combine. Continue whisking until sauce thinkens and just comes to a boil. 4. Remove from heat and stir in cheese and a light grating of fresh nutmeg. Cool slightly. Season with salt and pepper to taste. (Can be prepared to this point up to 3 days ahead; cover and refrigerate.) Make: 1. Preheat broiler. 2. Lightly toast bread. 3. Spread each piece of toast with a layer of sauce (about 1 generous tablespoon). 4. Sprinkle slightly less than 2 tablespoons of parmesan cheese over each toast. 5. Divide ham evenly among sandwiches, placing it atop cheese. 6. Spread a thick layer of sauce over ham and sprinkle with remaining cheese. 7. Broil until cheese melts and a few brown spots appear. Transfer sandwiches to plates and serve with a fork and knife.

Notes

This open faced sandwich is sure to please kids and adults alike. Serve with tomato or carrot soup for a simple, yet delicious dinner.
