Whole Grain Tartines with Ricotta and Cherries

Ingredients

  • 1/4 cup chopped walnuts, toasted
  • 4 tablespoons chopped fresh cherries
  • 4 tablespoons honey
  • 4 slices whole grain bread, lightly toasted
  • 4 to 6 tablespoons fresh ricotta
  • 2 tablespoon torn fresh mint leaves, lightly packed
  • a pinch of black pepper
  • 4 cups baby greens, lightly packed
  • 4 teaspoons extra virgin olive oil
  • 4 teaspoons cherry balsamic or balsamic vinegar

Directions

Prep: 1. Chop walnuts and cherries. Make: 1. Combine walnuts, cherries, and honey in a small bowl. 2. Spread each slice of toast with a thick layer of ricotta. 3. Spoon walnut mixture over ricotta, dividing evenly. 4. Sprinkle with mint leaves and freshly cracked pepper. 5. Toss greens with extra virgin olive oil, vinegar, and a pinch of pepper. 6. Divide salad and tartines between plates and serve.
