Black Bean Mango Salad

Ingredients

  • 2 mangos, diced
  • 3 scallions, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 tablespoon chopped fresh mint
  • 32 ounces canned black beans
  • 1 lime, juiced
  • 2 tablespoons extra virgin olive oil
  • sea salt and black pepper to taste

Directions

Prep: 1. Dice mangoes. 2. Chop scallions, cilantro and mint. 3. Rinse black beans. 4. Juice lime. Make: 1. Mix everything with lime juice and olive oil. 2. Season with sea salt and black pepper.
