Prep: 1. Chop/mince: garlic, red bell pepper, scallions, fresh cilantro and avocado. Make: 1. Sauté garlic in olive oil until fragrant. 2. Add salsa, beans, red pepper, cumin and salt. 3. Simmer until thickened, about 10 minutes, then stir in scallions. 4. Meanwhile, fry eggs sunny side up. Season with salt and pepper. 5. In each lettuce leaf, top with a spoonful of beans, fried egg, additional salsa, chopped cilantro and avocado slices.
