Chile Lime Cabbage Slaw

Ingredients

  • 1 1/2 cups fresh cilantro, chopped (about 1 bunch)
  • 1 ripe mango, peeled and diced
  • 1 head green cabbage, thinly sliced (preferably using a mandoline)
  • 1/4 cup red onion, finely diced
  • 3/4 cup toasted macadamia nuts, chopped
  • 2 limes, zested and juiced
  • 1 tablespoon honey
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon chile powder
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons plain yogurt

Directions

Prep: 1. Chop: cilantro, mango, cabbage, red onion and macadamia nuts. 2. In a bowl, combine zest and juice of limes. 3. Add honey, salt and chile powder and whisk to combine. 4. Whisk in yogurt and oil. Set aside in fridge. Make: 1. In a salad bowl, combine cabbage, red onion, cilantro and mango. 2. Add desired amount of dressing and toss to coat. 3. Garnish with the chopped macadamia nuts.

Notes

The slaw benefits from a 10-15 minute rest in the dressing, if you have time!
