Pork Loin In Rhubarb Sauce

Ingredients

  • 1 1/4 pounds rhubarb, chopped
  • 2 pounds boneless pork loin
  • 2 teaspoons sea salt
  • pinch of freshly ground black pepper to taste
  • 1 1/2 tablespoons extra virgin olive oil
  • 2 tablespoons brown sugar

Directions

Prep: 1. Pre-heat oven to 350. 2. Slice rhubarb into 1/4 inch slices. 3. Season pork loin with salt and pepper to taste. Make: 1. Heat olive oil on stove top in a dutch oven (or other oven proof dish with a lid). 2. Place pork in pan and sear both sides until browned. 3. Sprinkle rhubarb and brown sugar over pork, cover, and place in pre-heated oven. 4. Bake covered for 30 minutes, flip and bake for another 15 minutes. 5. Uncover and bake for 10 minutes. 6. Remove from oven, baste with cooking juices, cover and let rest for 10 minutes before serving.

Notes

The richness of this delicious and simple pork loin is the perfect compliment to the tangy rhubarb. While most of us don't venture into savory rhubarb dishes this is a great one to try.
