Green Beans with Almonds and Basil

Ingredients

  • 1 pound green beans, trimmed
  • 2 tablespoons chopped shallots
  • 2 tablespoons finely chopped fresh basil
  • 2 tablespoons sliced almonds
  • a pinch of sea salt
  • 2 tablespoons extra virgin olive oil
  • a pinch of freshly ground black pepper
  • 1/2 lemon, juiced and zested

Directions

Prep: 1. Bring 8 cups of water to boil. 2. Trim green beans. 3. Chop shallots and basil. 4. Slice almonds (if necessary) Make: 1. When water boils, add 1/4 teaspoon of salt and green beans, and cook until tender but still crisp, 3-6 minutes. 2. Drain green beans, then run them under cold water to stop cooking process. 3. Heat olive oil in a sauté pan over medium heat, then add shallot and a pinch of salt, and sauté until translucent, about 1 minute. 4. Stir in beans, add 1/4 teaspoon of salt, and cook, stirring occasionally, until heated through, about 2 minutes. 5. Remove from heat and add several grinds of pepper, a spritz of lemon juice, and nuts. Toss with basil and 1/2 teaspoon lemon zest before serving.

Notes

The original recipe called for brazil nuts in place of the almonds, if you can find them they are great ground and sprinkled on top of the green beans at the end.
