Kale Citrus Salad

Ingredients

  • 1 bunch kale, leaves torn off stalks
  • 1 jalapeño pepper (optional)
  • 3 clementines, peeled and chopped
  • 1 clove garlic, pressed
  • 1/2 orange, juiced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sugar
  • salt and pepper, to taste
  • 1 tablespoon plain yogurt
  • 4 ounce goat cheese

Directions

Prep: 1. Chop kale leaves. 2. Thinly slice jalapeño and remove seeds. (if using) 3. Peel clementines and cut into chunks. 4. Press or grate garlic. 5. Juice orange (about 1/4 cup). For the Dressing: 1. Whisk together the orange juice, olive oil, finely grated garlic, sugar, salt and pepper. Then add in yogurt and whisk until completely combined. 2. Combine kale and dressing and gently massage with your fingers. 3. Toss in the jalapeno and clementines and a little additional dressing. 4. Right before serving crumble on the goat cheese. Enjoy!

Notes

Sour cream can be substituted for plain Greek yogurt. If you can't find clementines substitute 1 orange for 3 clementines.
