Prep: 1. Preheat oven to 475. 2. Cut broccoli into florets. 3. Thinly slice and rinse leek. 4. Thinly slice garlic. Zest and juice lemon. Make: 1. In a large roasting pan, toss broccoli and leek with olive oil, pepper and lemon zest. Top with garlic. 2. Roast broccoli and leek mix for 12 minutes. 3. Meanwhile, chop spinach and parsley. 4. Heat a dry skillet over medium high. Add almonds and toast, tossing occasionally until fragrant, 3-4 minutes. 5. When broccoli is done, remove from oven and toss in spinach, almonds, parsley, lemon juice and honey. 6. Served topped with feta.
