Prep: 1. In a large pot, heat oil over medium heat. 2. Cut chicken into pieces. 3. Place flour in a shallow bowl. Make: 1. Salt and pepper chicken pieces to taste, then roll in flour to coat. 2. Fry chicken pieces in hot oil and heat until one side is golden brown, then turn and brown other side. Cook until chicken is no longer pink inside and juices run clear, about 10-12 minutes per side. 3. Drain on a paper towel and serve.
If you have safflower oil on hand it is great for the high-heat of frying.
