Prep: 1. Preheat oven to 450 degrees. 2. Slice chicken into strips approximately 1 1/2 inches thick. Make: 1. Place breadcrumbs, flour, and eggs in three separate shallow bowls. 2. Beat eggs. 3. Generously season the chicken with a few pinches of salt and pepper. 4. One at a time, coat each piece of chicken in flour, followed by the egg and then the breadcrumbs. 5. Place chicken pieces on a parchment-lined baking sheet. Repeat with remaining chicken. 6. Bake until chicken is cooked through, about 10-12 minutes, flipping halfway through. 7. Serve.
These are great served with your favorite dipping sauces! For a variation try toasting the breadcrumbs or using panko style breadcrumbs. You can also add 1-2 teaspoons of Italian seasoning (or really any herb) to the bread crumbs if you like.
