Arugula and Fresh Fig Salad

Ingredients

  • 4 cups arugula
  • 1 pint of fresh figs
  • 4 ounces prosciutto
  • 1/3 pound shaved parmigiano-regiano cheese (about 1/2 cup of shavings)
  • 2 tablespoons balsamic vinegar
  • 4 tablespoons extra virgin olive oil
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon freshly ground black pepper, to taste

Directions

Prep: 1. Slice figs. 2. "Shave" off slices of cheese with vegetable peeler (or simply grate if you prefer). Make: 1. Whisk together for vinaigrette: balsamic vinegar, olive oil, black pepper, mustard. 2. Toss arugula with vinaigrette. 3. Add on top: figs, prosciutto, cheese.
