Chicken Taco Salad

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons taco seasoning
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons cilantro, finely minced
  • 1 head green leaf lettuce, shredded
  • 1/2 cup monterey jack cheese
  • 2 whole tomatoes, diced
  • 2 whole avocados, diced
  • 1/4 cup salsa
  • 1/4 cup sour cream

Directions

Make: 1. Season both sides of the chicken with taco seasoning 2. Heat the oil in a large skillet over medium-high heat. Cook the chicken until done through, about 4 minutes per side (if chicken is thick, cover while cooking). Set aside to cool (or use leftover chicken!) 3. While chicken is cooking and cooling, prep salads: mince cilantro, shred lettuce, shred cheese, dice tomatoes, and dice avocados. 4. Once chicken is cool cut into bite sized pieces. 5. Let everyone assemble their own salad with the shredded lettuce, chicken, tomatoes, cheese, avocado, and cilantro. Top with salsa and sour cream.
