Prep: 1. Melt butter in small saucepan over low heat, do not brown. Let cool. Make: 1. In a bowl, whisk together four, eggs, milk and melted butter. 2. Melt a little of the extra butter in a frying pan over medium heat. 3. When griddle/pan is hot, ladle on the batter to make thin pancakes. 4. Cook pancakes for 2-3 minutes, until edges begin to brown, flip and cook for another 1-2 minutes.
These pancakes are thin and much more like crepes than traditional American pancakes. They can be softer, to get crispier finish increase the heat and the cooking time. Excellent toppings include greek yogurt, fresh fruit, and jam - in addition to the traditional maple syrup.
