Prep: 1. Heat grill to medium-high. 2. Brush chicken with 1 teaspoon of the oil, season with salt and pepper. 3. Slice onions and peaches. 4. Combine in bowl: onions, peaches, 1 tablespoon of oil, salt and pepper to taste. Make: 1. Grill chicken and onions, turning, until chicken cooked through and onions tender (~6 mins/side). 2. Meanwhile, grill peaches until charred (~2 mins/side). 3. Toss arugula with chicken, onions, peaches, vinegar, remaining oil. 4. Serve all together!
