Prep: 1. Preheat grill to medium and soak skewers in water (if using wooden) 2. Cut chicken into chunks. 3. Combine chicken, 3 tablespoons of olive oil, salt and pepper to taste in a bowl and toss well to coat. 4. Thread the chicken chunks onto skewers, leaving space in between. Make: 1. Grill chicken, turning until cooked through and lightly seared (~12-14 mins). 2. Remove chicken from skewers and combine grilled chicken in bowl of parmesan, basil, pine nuts and garlic. 3. Toss well. Stir in another tablespoon olive oil if dry and serve.
