Sesame Ginger Salmon with Kale

Ingredients

  • 2 tablespoons fresh ginger, minced
  • 1 teaspoon garlic, minced
  • 1/4 cup tamari (or soy sauce)
  • 2 teaspoons sesame oil
  • 1 pound salmon
  • 1 pound carrots
  • 1 red onion
  • 1 bunch kale
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon sesame oil
  • 1/2 teaspoon rice vinegar
  • 2 teaspoon black sesame seeds (optional)

Directions

Prep: 1. Mix: ginger, garlic, tamari, sesame oil. (option to add a tsp of brown sugar) 2. Pour mixture over salmon; marinate at least 20 minutes (up to an hour or two). 3. Chop carrots; slice red onion into slivers; remove kale ribs and chop or tear into pieces. Make: 1. Heat in large pan: olive oil, sesame oil, rice vinegar, splash of tamari. 2. Saute onions until they begin to soften (a couple mins); add carrots, cook another few minutes. 3. Add salmon to pan; cook a few minutes more. 4. Add kale on top of salmon, distributing evenly around the pan. 5. Cover pan with a lid and allow the kale to steam and salmon to finish cooking, another 8-12 mins or so (depending on thickness) Serve: Salmon on top of kale, carrots and onions; sprinkle with black sesame seeds as a garnish.
