Prep: 1. Mince/chop: garlic, grape tomatoes, and cilantro leaves. Make: 1. Grill steak and season with salt, pepper, and garlic. 2. After cooked, cut steak into bite size pieces. Keep warm. 3. For corn relish: Heat olive oil in skillet over medium-high heat. 4. Add corn kernels, grape tomatoes, cilantro, salt and pepper. Cook for 5-8 minutes. 5. Spread butter on one side of tortilla then place butter side down onto skillet over medium heat. 6. Sprinkle one side of tortilla with goat cheese, then a couple spoonfuls of chopped steak. 7. With a spatula, fold tortilla over filling and cook each side until crisp. 8. Serve with corn relish.
