Quick Pizza Dough

Ingredients

  • 2 1/4 cups flour
  • 1 envelope rapid rise yeast
  • 1 1/2 teaspoons sugar
  • 2/3 cup very warm water (120° to 130°F)*
  • 3 tablespoons extra virgin olive oil
  • 3/4 teaspoon salt

Directions

Make: 1. Combine 1 cup flour, undissolved yeast, and sugar in a large bowl. Add very warm water (it should feel warm but not hot on the inside of your wrist), oil and salt; mix until well blended. 2. Gradually add enough remaining flour to make a soft dough (you may not sure it all). Dough should form a ball and will be slightly sticky. 3. Knead on a floured surface, adding additional flour if necessary, until smooth and elastic, about 4 minutes. 4. Cover; let rest on floured surface 10 minutes. 5. Pat, stretch or roll dough to fill a greased pizza pan or baking sheet. 6. Use with your favorite pizza recipe.

Notes

Using rapid rise yeast makes this homemade dough a snap! You can use the same recipe with regular active dry yeast, just leave yourself time to let it rise for about an hour before shaping. When using yeast watch the water temperature, too hot and it will kill the yeast, too cold and it won't activate. If you don't have a thermometer a good test is to use the inside of your wrist, the water should feel warm but not hot.
