Prep: 1. Preheat oven to 425. 2. Place beets on foil; drizzle with 1 tablespoon oil and season with salt and pepper. 3. Fold foil into a packet and tightly seal; roast until beets are tender, ~30 minutes. 4. Carefully open packet and let cool. Remove skins from beets and cut into wedges. 5. Slice radishes and avocado. 7. Snip chives. Make: 1. Combine beets, mixed greens, radishes, avocado, and chives in a large bowl. Season with salt and pepper. 2. Whisk together vinegar and remaining tablespoon oil and season with salt and pepper for dressing. 3. Drizzle over salad, gently toss, and top with goat cheese.
