Cherry Tomato, Melon and Mint Salad

Ingredients

  • 4 cups melon, chopped into small cubes
  • 1/4 cup plus 2 tablespoons coarsely chopped fresh mint
  • 1 cup ripe cherry tomatoes, halved
  • 1/2 lemon
  • 3/4 teaspoon sea salt

Directions

Prep: 1. Chop melon, mint and cherry tomatoes. 2. Squeeze lemon (need ~4 teaspoons juice). Make: 1. Gently toss all ingredients in bowl. 2. Serve.

Notes

This salad is best served within an hour of making it.
