German Potato Salad

Ingredients

  • 1 onion, peeled and thinly sliced
  • 1/4 cup chopped fresh parsley leaves
  • 1 1/2 pounds yukon gold potatoes
  • sea salt and black pepper, to taste
  • 12 thick slices bacon
  • 6 tablespoon white wine vinegar

Directions

Prep: 1. Chop/slice: onion and parsley. Make: 1. Put potatoes into a pot, cover with 2" to 3" cold water, and add salt. 2. Bring to a boil over medium-high heat, reduce heat to medium, and gently boil until potatoes are tender, 15–20 min. 3. Meanwhile, cook bacon in a skillet over medium heat until crisp, 10–15 min. 4. Drain on paper towels, setting skillet with rendered fat aside. 5. Crumble bacon into large pieces. 6. Drain potatoes, peel while hot, and cut into cubes. 7. Put potatoes into a serving bowl and add bacon and onions. 8. Return skillet with bacon fat to medium-high heat until hot. Carefully add vinegar, salt and pepper to taste. 9. Pour hot dressing over potato mixture and toss well. Garnish with parsley. Serve warm.
