Prep: 1. Preheat oven to 450. 2. Cut up potatoes and soak in hot water for 10-15 minutes. 3. Dry potatoes thoroughly. Spread on a baking sheet; toss with olive oil and a generous amount of sea salt and garlic powder. Make: 1. Bake potatoes for 30 minutes or until golden brown, stirring once. 2. Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium-low heat. 3. Add onion, garlic, a pinch of salt and stir. Cook for 7-8 minutes until translucent and very fragrant, stirring frequently. 4. Add paprika, garlic powder, cayenne and stir. 5. Add tomato paste, hot sauce, 1.5 cups water and stir. 6. Cook for 10-12 minutes or until simmering and the flavors are well blended. Add seasonings as desired. (For a smooth sauce, puree in a blender or food processor.) 7. Remove potatoes from oven and sprinkle with more salt to taste. Drizzle with tomato sauce and serve.
