Prep: 1. Peel and grate ginger. 2. Grate orange rind (need ~1 teaspoon). 3. Juice orange. Make: 1. Pierce sweet potatoes with a fork. 2. Microwave 10-12 min. or until tender, turning over halfway through. 3. Peel, cut into large chunks, and process in a food processor or blender (or mash by hand); mix until well combined with orange juice, ginger, and orange rind. 4. Stir in salt and pepper.
You can also cut the sweet potatoes into large pieces and boil them for 20-30 minutes if you prefer.
