Prep: 1. Remove stems from mustard greens, wash leaves and drain. 2. Chop garlic. Make: 1. Heat olive oil in pan and add garlic, let sizzle, then add greens. Cook covered for 5 min. 2. Let cool, season with red pepper flakes, vinegar, salt and pepper and more olive oil. 3. Chop mixture. 4. Lay prosciutto flat and cut in half. 5. Place small ball of greens on each piece of prosciutto and roll greens inside. Serve.
Serve as hors d'oeuvre or as part of an antipasto plate.
