Prep: 1. Peel and dice potatoes. 2. Chop onions. Make: 1. Toss together potatoes, onions, salt and pepper. 2. Heat vegetable oil in skillet. 3. Add potatoes to skillet, toss a few times, and spread evenly in the pan and press down with spatula. 4. Reduce the heat to medium and cook slowly, pressing down several more times, until browned at the bottom, about 15 min. 5. Cut the cake down the middle, then turn each side over. 6. Cook second side until golden brown. Serve while hot.
