Prep: 1. Peel and grate potatoes. 2. Wrap potatoes in clean dish towel and wring out as much moisture as possible. 3. Beat eggs. 4. Grate onions. Make: 1. Combine potatoes, eggs, flour, onions, and salt in bowl. 2. Heat a large skillet with oil over medium heat until hot. 3. Drop spoonfuls of potato mix in skillet then spread into 3" cakes about 1/4" thick. 4. Fry until browned on the bottom, then reduce heat to medium. 5. Turn and cook the other side until crisp, about 3-5 min each side. 6. Drain with paper towels. 7. Serve with sour cream and chives.
