Prep: 1. Preheat oven to 350. Boil water for sweet potatoes potatoes. 2. Chop pecans. Skin potatoes. 3. Juice lemon 4. Mix sugar, pecans and butter in bowl. Make: 1. Grease a 9x9 baking dish. 2. Cook sweet potatoes in pot of boiling salted water until very tender, about 12 minutes. 3. Drain and mash sweet potatoes. 4. Beat eggs, syrup, vanilla, 1/2 tablespoon lemon juice, and salt in bowl. Mix in mashed sweet potatoes. Transfer sweet potato mixture to prepared dish. Sprinkle pecan topping evenly over mixture. 5. Bake until sweet potato mixture is set and topping bubbles, about 1 hour. Let stand 15 minutes and serve.
Delicious sweet potato side for your holiday table or anytime. If you want to cut down on time, leave out the eggs and don't bake it. Just mix the topping into hot mashed sweet potatoes. If you prefer a less sweet flavor cut the brown sugar and syrup by up to half.
