Prep: 1. Heat a grill to high heat. 2. Mince garlic and rosemary finely. 3. In a bowl, combine 1 tablespoon kosher salt, 1 teaspoon black pepper, rosemary and garlic. 4. Brush the steaks with the olive oil. Sprinkle the rosemary mixture over each side of the steaks to coat evenly. Make: 1. Place the steaks on the grill and cook until golden brown and slightly charred (the blood will start to rise to the top), 4 to 5 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F) or 8 to 10 minutes for medium-well (150 degrees F). 2. Remove from heat and let rest for 5 minutes.
This is great with oregano or thyme as well.
