Prep: 1. Peel and grate carrots. 2. Chop parsley and chives. 3. Mince garlic. 4. For vinaigrette: combine salt and pepper to taste, 1/8 cup lemon juice, white wine, garlic and olive oil. Whisk to emulsify. Make: 1. Dress carrots and herbs with vinaigrette. Season with more salt and pepper if needed, serve.
