Prep: 1. Peel kohlrabi and cut into 1/4" thick matchsticks. 2. Cut cabbage into 1/4" thick strips. 3. Chop dill. 4. Zest 1 lemon. 5. Crush garlic. Make: 1. Combine kohlrabi, cabbage, dill, lemon zest, 6 tablespoons lemon juice, olive oil, garlic, salt and pepper in a bowl. 2. Use hands to massage everything together for 1 min. Let stand for 10 min. 3. Add alfalfa sprouts and mix with hands. Taste and adjust seasoning. 4. Serve, leaving most of the juices behind.
