Prep: 1. Chop onion. 2. Slice chicken breasts into 1/2 inch slices. 3. Slice and place into bowls for serving: avocado, tomato, lettuce and cilantro. 4. Grate cheese. Make: 1. Heat 1 tablespoon olive oil in a skillet over medium-high heat. 2. Add the onion and cook for 2-5 minutes, stirring occasionally. Add the strips of chicken to the pan, and sprinkle with the taco seasoning. Mix together and cook, for 1-2 minutes and then flip and continue cooking until chicken is browned and cooked through, 1-2 minutes. 3. Warm tortillas either in a hot skillet for about 1 minute per side, or wrap them in a damp paper towel and microwave for 30-45 seconds. 4. Serve chicken in warmed tortillas with toppings to taste.
