Ingredients

  • 4 ears of corn
  • 1/2 cup shredded cotija
  • 2 limes, halved
  • 1 tablespoons chili powder
  • a pinch of sea salt (optional)

Directions

Prep: 1. Prepare a medium-hot grill. 2. Remove any husks from corn, other than inner one or two layers. Peel back inner layers but keep them attached and discard silk. Pull inner husks back into place. Make: 1. Grill for 10 minutes, rotating a couple times. Pull all off grill when ready. 3. Sprinkle with cotija, chili powder, and salt. Drizzle with juice of a half lime.

Notes

You can also use a skillet or broiler if you prefer, just remove all of the husk first. Check out our favorite tips for grilling here - http://blog.gatheredtable.com/2015/06/26/barbecue-basics/
