Ingredients

  • 1/2 lemon, juiced
  • 4 tablespoons finely chopped fresh italian parsley
  • 5 persian cucumbers, cut into 1/8" cubes
  • 2 tomatoes, finely chopped
  • 1/2 red onion, finely chopped
  • 2 tablespoon extra-virgin olive oil
  • sea salt and pepper, to taste

Directions

Prep: 1. Juice lemon. 2. Chop: parsley, cucumbers, tomatoes, and red onion. Make: 1. Whisk together olive oil, 2 tablespoons fresh lemon juice, and salt and pepper in a bowl. 2. Add parsley, cucumbers, tomatoes, and red onions and toss to combine. Serve at room temperature.
