Prep: 1. Peel and cut potatoes. Make: 1. Place potatoes in a large pot and cover with water. 2. Bring to a boil and cook until potatoes are tender, ~8-10 min. Insert a knife into center of potatoes to ensure tenderness. Drain. 3. Add butter and milk to the same pot and place over the lowest heat to melt butter and warm milk. 4. Return potatoes to pot and mash until smooth. 5. Add the cottage cheese and stir. Season with salt and pepper. Stir briskly before serving.
Try adding ricotta or cream cheese in place of the cottage cheese to make it your own!
