Celery Root and Beet Salad

Ingredients

  • 2 carrot peeled
  • 2 beet trimmed peeled
  • 1 celery root trimmed peeled
  • 1 cup fresh mint leaves finely chopped (about 1/2 a bunch)
  • 2 thai chiles finely chopped
  • 1 lemon juiced
  • 4 tablespoons extra virgin olive oil
  • salt and pepper to taste

Directions

Prep: 1. Finely shred carrot, beetroot and celery root using a mandolin, grater or food processor. Make: 1. Combine vegetables in a bowl (add beetroot at end if you don't want it to color everything with juices). 2. Add mint and chilies and toss well. 3. Dress with lemon juice and olive oil. Season with salt and pepper. Serve immediately.
