Baked Zucchini with Basil and Parmesan

Ingredients

  • 2 pounds zucchini
  • 4 teaspoons sea salt
  • 3 tablespoons extra virgin olive oil
  • 1/2 cup fresh basil, chopped
  • 1/4 cup breadcrumbs
  • 1/4 cup parmesan

Directions

Prep: 1. Preheat oven to 400. 2. Shred zucchini and cheese. 3. Spread 1/2 tablespoon olive oil over the inside of a 10" baking dish. 4. Sprinkle with 1 tablespoon of breadcrumbs and shake to coat bottom and sides evenly. Make: 1. Mix zucchini with 1 1/2 tablespoons of olive oil and the chopped basil. Loosely pat into the baking dish. 2. Stir together the remaining 1/4 cup breadcrumbs, cheese, and 1 tablespoon of oil. Sprinkle over the zucchini. 3. Bake for 30-35 minutes or until bread crumbs are deeply browned
