Prep: 1. Preheat oven to 400. 2. Peel and cut potatoes into 1/3" thick French fry-style strips. 3. Float cut potato strips in cold salted water, to prevent discoloring. 4. Grate cheese. 5. Chop parsley. 6. Cut butter into 6 cubes. Make: 1. Drain potatoes and pat dry. Spread 1 tablespoon of oil on each of 2 rimmed baking sheets and spread out potatoes. 2. Sprinkle dried herb evenly over potatoes. Liberally spread cheese and parsley on top. 3. Drizzle remaining 2 tablespoons of oil over cheese. Scatter cubed butter around pans. 4. Bake until potatoes are golden brown, rotating pans after 30 minutes, for 45-50 minutes total. 5. Use spatula to lift off potatoes with crusty cheese adhered to them. Sprinkle with salt and pepper to taste. Serve hot.
