Gatheredtable
adapted from Home Made Summer By Yvette van Boven

Ingredients

  • 7 tablespoons unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon granulated sugar
  • 2 tablespoons confectioners' sugar, plus more for rolling
  • 1 cup all-purpose flour
  • 1/4 teaspoon sea salt
  • 15 walnut halves, about 1/4 cup

Directions

Prep: 1. Preheat oven to 400. 2. Line a baking sheet with parchment paper. Make: 1. In a bowl, beat butter with vanilla, granulated sugar, and confectioners' sugar for about 1 minute until creamy. 2. Add flour and salt and mix until just combined. 3. Using your hands, roll batter into small balls, the size of a walnut. Place them on the lined baking sheet and gently press a nut into each. 4. Bake for 10-12 minutes, until barely golden. Make sure they don't brown. 5. Let cookies cool for about 5 minutes, then roll them (while still hot) in confectioner's sugar to coat. Let them cool completely, then roll them in confectioners' sugar once more.

Notes

Feel free to replace walnuts with pecans.
