1/2 cup fresh mint, leaves torn (about 1/2 a bunch)
1/2 fresh red chili pepper, sliced
2 ounces parmesan, shaved
1/4 cup extra virgin olive oil
sea salt and black pepper, to taste
1. Slice zucchini into long ribbons using a vegetable peeler.
2. Tear mint leaves.
3. Slice chili pepper and shave parmesan.
1. Scatter ingredients over zucchini on plate.
2. Drizzle with olive oil and season.
