Prep: 1. Peel and cut grapefruit and oranges into segments. 2. Slice celery and avocado. 3. Dice shallots. 4. Shell edamame if needed Make: 1. In a jar with lid combine shallots, honey, mustard, vinegar, 5 tablespoons olive oil, a pinch of salt, and a few pinches of pepper. Place lid on jar and shake until mixture is emulsified. 2. Taste dressing and season to taste, adding more salt, pepper, or acid as necessary. 3. In a bowl, combine greens, grapefruit, oranges, edamame, celery, and avocado. 4. Pour desired dressing over salad. Sprinkle with salt and pepper. Enjoy immediately!
