Mushroom Parcels

Ingredients

  • 3 cups cremini mushrooms
  • 3 cups button mushrooms
  • 1 tablespoon lemon zest
  • sea salt and freshly ground black pepper, to taste
  • 4 garlic cloves, crushed
  • 4 sprigs fresh thyme
  • 4 tablespoons unsalted butter

Directions

Prep: 1. Preheat oven to 400. 2. Cut four 12-inch squares of parchment paper. 3. Clean mushrooms by wiping with a damp cloth or brushing lightly with a small pastry brush. 4. Cut mushrooms in half or if they are large cut into quarters. Make: 1. In a large bowl toss together mushrooms, lemon zest and salt and pepper. 2. Divide seasoned mushrooms between the four parchment paper squares. 3. Add 1 crushed garlic clove, thyme sprig and tablespoon of butter to each square. 4. Lift the edges of the parchment paper and pull them together to create a small bundle. Secure each bundle with ovenproof string. 5. Put parcels onto a baking sheet and bake in preheated oven for 18 minutes.

Notes

Cooking in parcel is a bit old-fashioned, but we love it! A simple yet elegant way to serve mushrooms. Add any of your favorite herbs and try a drizzle of olive oil instead of butter.
