Prep: 1. Preheat oven to 375. 2. Cut bread into 4 slices about 1/2-inch thick. Make: 1. Put bread onto a baking sheet, drizzle with olive oil and toast in oven until lightly golden, about 10-12 minutes. 2. Meanwhile, rinse tomatoes and halve or quarter if they are large. Mince garlic cloves and smash into a paste. 3. Toss tomatoes with garlic, torn basil leaves and extra virgin olive oil. Season with salt and pepper to taste. 4. Top each slice of toasted bread with tomato mixture. Garnish with a sprinkling of coarse sea salt.
If you are a cheese-lover garnish each slice with freshly grated parmesan.
