1. Let ice cream sit out at room temperature for about 5 minutes or until soft enough to hold its shape but pliable enough to smooth onto cookies. 2. Put four cookies upside down on a plate. 3. Scoop a ball of ice cream and press it onto cookie. 4. Smooth ice cream with a spatula until it is somewhat flat. 5. Put another cookie on top of ice cream and gently press into ice cream to make a sandwich. 6. Freeze for about 10-20 minutes before serving.
This recipe is quick and easy! Of course if you have a bit more time, why not bake a batch of your favorite cookies to use in place of the store-bought.
