Prep: 1. Preheat grill and boil water for potatoes. Make: 1. Cook potatoes in pot of boiling salted water until just tender, ~25 minutes. Allow to cool enough to handle. 2. Using hot pads or a kitchen towel, gently press each potato until split open and flattened to about 1-inch thickness (don't press too flat or potatoes will break apart). 3. Brush potato tops with oil; sprinkle with salt, pepper, and some rosemary leaves. (this can all be done up to 2 hours in advance) 4. Place potatoes on grill and cook until crisp and beginning to color, ~5 minutes per side. 5. Serve sprinkled with more rosemary leaves.
