Homemade Cinnamon Raisin Bread (gf)

Ingredients

  • 1/2 cup soaked raisins
  • 1 cup of brown rice flour
  • 1 cup almond flour
  • 3/4 cup white rice flour
  • 1/4 cup tapioca flour
  • 2 1/2 teaspoons xanthan gum
  • 1 teaspoon sea salt
  • 2 teaspoon instant yeast
  • 2 teaspoons of cinnamon
  • 2 eggs
  • 2 tablespoons honey
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon vinegar

Directions

Prep: 1. Soak raisins in boiling water for 5 minutes. 2. Whisk together rice flour, almond flour, white rice flour, tapioca flour, xanthan gum, salt, instant yeast and cinnamon in a bowl. 3. Add eggs, raisins, honey, olive oil, vinegar and 1 1/4 cup warm water and stir until thick like cake mix. Add more water if needed. 4. Pour mix into pan and let rise as high as 3/4 of pan, ~ 1 hour. Make: 1. Preheat oven to 350. 2. Bake for 30-45 minutes.
